Build a show around French chef Jean-Georges Vongerichten and his half-Korean wife Marja as they travel around South Korea sampling the country's staple food, kimchi; add a few random and gratuitous appearances by actors like Hugh Jackman and Heather Graham; and what do you get? A travelogue food show that could very well signal the beginnings of another culinary food craze.

"Korean food isn't shy," says narrator Hugh Jackman in a voiceover that accompanies shots of fiery red hot stews. "It's all about loud, punchy flavors. About ingredients that take time to pickle and ferment in giant earthenware pots."

The intro sums up Korean fare in a nutshell, a cuisine that's based on a holy triumvirate of garlic, red pepper and ginger. Kimchi is to Korean cuisine what bread is to the French and what pasta is to Italians - the symbol of their national gastronomy. It is spicy, fermented Napa cabbage seasoned with red pepper flakes, garlic and ginger.

And as the preview points out, though South Korea remains virtually uncharted terrain for most Westerners, globalization of Korean food has begun to gain momentum.

While Korean restaurants - namely Korean barbecues - have been in major urban centers around the world for years now, the Kimchi Chronicles is hoping to turn Korean fare as mainstream as Thai food.

The new documentary series, which debuts Sunday on a New York City TV station, seems to bring together a cast of random characters in a travel food show that features the pungent, spicy, garlic and ginger-soaked cabbage as its main ingredient.

Jean-Georges Vongerichten is a fine dining French chef, a cuisine that thumbs its nose at spice and heat in favor of cream and butter - a non-existent food group in the Korean diet.

He owns eponymously named restaurants in New York and Shanghai among others.

Hugh Jackman, an Australian actor is parachuted into the series to lend his voice and star power to the show.

Early previews show Heather Graham looking rather warily into vats of fermented kimchi and taking dainty, shy bites of food.

But the woman at the center of the series, Vongerichten's wife Marja, is the common denominator who binds everyone together through her enthusiasm for Korean fare. Marja is half-Korean, half-American and is also writing a cookbook about Korean food.

The show is produced by the same people who createdSpain...On the Road Again, hosted by Mario Batali, former New York Times food writer Mark Bittman, and Gwyneth Paltrow - which could explain the appearance of another blond bombshell in the Kimchi Chronicles.

Appetites for Korean food are stronger in some Western cultures than others. Instant Korean ramen, for instance, is increasingly displacing instant macaroni and cheese known as Kraft Dinner or KD, on university campuses in Canada.

The Nong Shim brand of Shin Ramyun is also commonly found in mainstream grocery stores in urban centers there.

The PBS series debuts Sunday at 4 pm on WNET in New York  before airing in the rest of the country later this summer.

세계적 요리사 “한식은 한국적일수록 더 매력적”

“한식은 한국적일수록 더 매력적입니다.”

최 근 미국에서 TV 방영이 시작된 다큐멘터리 ‘김치 크로니클(Kimchi Chronicle : 김치 연대기)’을 제작하고 직접 출연한 세계적 요리사 장 조지는 1일(현지시각) 한식의 세계화 방법으로 이같이 짧지만 의미있는 해법을 제시했다.

이날 뉴욕의 스파이스 마켓(SPICE MARKET) 식당에서 ‘김치 크로니클’ 방영을 기념하기 위해 열린 파티에서 장 조지는 ‘김치 크로니클’을 제작하기 위해 한국에 머물렀던 기간이 즐겁고 행복했었다고 말했다.

프랑스와 아시아 요리를 결합해 세계 최고 요리사 반열에 오른 장 조지는 밀려드는 손님들과 인사하느라 분주했다. 

장 조지의 아내이자 한국계 혼혈 입양아인 마르자는 또렷한 우리말로 “안녕하세요”라고 손님들에게 인사하고 한국의 전통 음식과 노래방 등의 문화도 소개했다. 마르자도 남편과 함께 김치 크로니클에 출연했다. 

행 사에는 영화 ‘X맨’에서 늑대인간 ‘울버린’으로 나온 휴 잭맨 부부, 영화 ‘로스트 인 스페이스’ 등으로 알려진 헤더 그레이엄, 김영목 뉴욕 총영사, 방송인 박정숙 씨 등 800여 명이 참석해 성황을 이뤘으며 현지 언론의 취재 열기도 뜨거웠다. 

휴 잭맨과 헤더 그레이엄은 김치 크로니클에 직접 출연했고 휴 잭맨은 한국 음식을 요리할 정도로 좋아하는 것으로 알려졌다.

김영목 뉴욕 총영사는 “뉴욕에서 한국 음식이 빠른 속도로 인기를 얻고 있고 특히 젊은이들 사이에서는 김치를 먹을 줄 알아야 지식인 취급을 받는다는 얘기도 있다”고 뉴욕에서 한국 음식이 저변을 확대하고 있다고 전했다. 

김 치 크로니클 공동 제작자 자격으로 행사에 참석한 박정숙 씨는 “한국에서 촬영할 때 장 조지에게 퓨전 한식을 소개했는데 한국적이어야 세계화할 수 있다는 말을 들었다”며 “한국 음식이 세계인에게 익숙해지려면 약간의 변화도 필요하다”고 말했다.

행사에서는 김밥, 잡채, 갈비찜, 막걸리 셔벗, 생강 볶음밥 등 장 조지가 직접 만든 20여 가지 한국 음식도 인기를 끌었다.

미국 공영방송 PBS를 통해 방송되는 13부작 다큐멘터리 김치 크로니클은 한국 각지를 돌며 촬영해 김치뿐 아니라 안동 간고등어, 제주도 전복 등 한국 지방의 유명 음식과 관광 상품을 소개할 기회가 될 것으로 보인다. 

지난달 8일 미 동부지역부터 방영이 시작됐으며 올여름까지 미국 전역에서 방송될 예정이다.
